Pencas
Porto Santo name for a variety of cardoon (Cynara cardunculus) whose leaf midribs are eaten raw; also found at Caniçal and Piedade as cardo-da-gente.
This is the name by which the highly prolific variety of Cynara cardunculus is known on the island of Porto Santo (‘holy harbour’). The central parts of the leaves of this composite are eaten raw by the island’s inhabitants once the spines have been removed. The plant also grows at Caniçal (‘reed bed’) and Piedade (‘pity’), where it is known as cardo-da-gente.
