Caramelo

Local name for fragments of fossil coral from Porto Santo's limestone deposits, used to reduce wine acidity and to make fizzy drinks.

This is the name given to certain fragments of fossil corals of the genus Danaia and others, which occur in the limestone deposits of Porto Santo. Caramelo, which consists of carbonate of lime, was used to counter the acidity of wines, and also in the preparation of fizzy drinks such as lemonades, Porto Santo mineral water, etc.
