Describes the caniço, a rack of canes or thin rods on which chestnuts are smoke-dried over a small fire pit, after which they are trodden in baskets to remove the shells.
A rack made of canes or thin rods on which chestnuts are laid out to dry. In the room where the drying takes place, a small pit is dug in the floor and firewood is placed in it and set alight; the fire must not be allowed to go out while the process lasts. Only the smoke should reach the chestnuts, and when they are dry they are trodden underfoot in baskets so that they shed their shells.
