Arrowroot, cultivated at Madalena, where starch is extracted from its roots and used in broths as a restorative.

A species of the family Zingiberaceae, cultivated at Madalena (‘Magdalene’). The method used there to extract the starch is to crush the roots in tubs and then wash the resulting pulp; this pulp is passed through sieves and finally put out in the sun to dry. Arrowroot, or farinha de substância, is widely used in broths as a restorative.
