Aipo (Apium graveolens)

An annual or biennial plant of the Umbelliferae family, common in Madeira and Porto Santo. It has basal leaves that are pinnatisect or 3-sect, with wide segments, and cauline leaves that are 3-sect or entire; its umbels are sessile or with short peduncles, and devoid of involucre and involucel, and its fruits are subglobose. The root and fruits of celery are diuretic and stimulating, and the leaves and stalks can be eaten in soup or salad. Garden celery is not found in the archipelago.
